Millet-Cauliflower Mash with Vegan Mushroom Gravy (Served with a big helping of #Veggies) Millet-Cauliflower Mash 5 cups water or veggie broth 1-1/2 cups lightly toasted millet 2 cups cauliflower, chopped 2 Tablespoons nutritional yeast flakes 1-2 Tablespoon coconut b***er sea salt and pepper to taste. Bring water to boil. Add millet, cauliflower and pinch of sea salt. Reduce heat. Simmer 25 minutes Mash with rice/potato masher. Add nutritional yeast flakes, coconut b***er and salt/pepper. Give a good stir. Vegan Mushroom Gravy 1 yellow onion 2 cups mushrooms (I used a mix of Shiitake and Baby Bella mushrooms) 2 cloves garlic, minced 4-5 leaves fresh sage, minced 1 Tablespoon Mirin 1 Tablespoon Tamari 1-2 Tablespoon coconut oil 1-1/4 cups almond milk (coconut milk is great as well) 1 Tablespoon organic Kuzu Root Eden Foods sea salt & pepper to taste Dissolve 1 Tablespoon kuzu in 1/4 cup almond milk and set aside. In medium size skillet, sauté onion, mushrooms, garlic and sage in coconut oil until soft. Add Mirin and Tamari. Give a good stir. Add 1 cup almond milk and the kuzu mixture. Turn off heat and give a good stir. Season with salt and pepper to taste. Note: Add more almond/coconut milk if needed until desired consistency.
